Even with a full-on pizza war in Detroit, few pies draw as much attention as the Khana collaboration with Pie Sci.
Khana is a Pakistani street food pop-up kitchen run by chef Maryam Khan. Like a lot of chefs on the DIY tip, they’re adventurous and able to pull off things I simply don’t see a lot of traditional brick-and-mortar spots do, linking up with a storied pizza spot and releasing a delicious butter chicken pizza for one week only.
That’s the “We Khana Believe It’s Butter Chicken” pizza, available at both Pie Sci (that’s short for ‘pizza science’) locations in Detroit and Oak Park. Best served up in the traditional Detroit format of square, this decadent pie is so good that I’ve already eaten twice this week. (I am very full; please help.)

The depth of the butter chicken is something you just don’t usually get on a pizza. It’s velvety smooth with just a splash of sweetness and plenty of earthiness from the garam masala, garlic and finger.
Add in red onion, a bit of cilantro (feel free to add even more fresh cilantro when you get this pie home) and a yogurt chutney drizzle to connect it all, and you’re in business.
When I popped in this week, the staff at the Pie Sci Detroit spot said they were doing numbers during the week that they usually only see on the weekends.
It’s no surprise that pop-ups and dining out in general are becoming more an “event-based” operation, drumming up interest with your audience with special drops and limited edition collaborations between two local small businesses. It's work. Here, there’s no gimmick to drive the sales; just one of the best damn pizza pies you can get in Detroit – for one week only.
